Here is a celery and cucumber juice to enjoy on a hot summer’s day. Due to its high nutritional content, it can even serve as a substitution for a meal, especially when the weather gets really hot. The juice is a good source of electrolytes, is pH balancing and overall can help to keep you cool this summer. It is also great for when you just want more nutrients in the body or if you are on a juice fast.
This is also a great juice recipe for killing worms and other similar infections. Although the anti-parasitic ingredients are low, the juice does not contain any ingredients that will feed worms. The juice can help to strengthen the immune system, and thereby, help to kill the worms.
What I like about this juice is that it leaves behind very little pulp because the celery, cucumber and tomatoes, are super high in water.
Another plus is that the pulp can be used to make a broth, which can be used to make a delicious soup, or consumed as is. It is especially good during a fast because it can help to keep you warm. The instructions for the pulp are posted below the juice recipe.
Makes 5-6 cups.
5 Celery Stalks
1/2 Green Pepper
2 Cloves Garlic
1 Slice Onion
1/3 Bunch Parsley
1/2 tsp. Sea Salt
Process all the ingredients through a juicer except for the lemons and sea salt.
Juice the lemons either by hand or with a lemon juicer.
Add the lemon juice and salt to the rest of the juice and stir. Serve immediately or store in the fridge for up to a day.
To make the broth, dump the pulp into a medium-sized pot and add the following ingredients:
Rind from 1/2 Lemon
1 bay leaf
10 cloves (or less if you like)
2 cups of water
On medium heat, bring to a boil. Reduce heat and simmer for about 15 to 20 minutes.
Strain the pulp through a fine mesh sieve.
Now you can throw away the pulp. 🙂
Add a pinch of salt to the broth and enjoy.
You can also add a bit of nut milk in order to give it some creaminess.
