Healthy Vegan Cabbage Casserole Recipe.
Enjoy this easy and delicious cabbage casserole for your dinner. It doesn’t take much time to prepare, and can be served with just about any salad or other side dish that you like.
Plus, this is a cheap dish to make if you’re on a budget as both the rice and cabbage can be purchased at fairly low prices.
The most expensive ingredient is the vegan cheese, but you could always opt for regular cheese if your body allows it.
1 cup uncooked rice
Olive oil – to cover bottom of frying pan.
2 cups mushrooms, chopped
1 medium onion, diced
1 clove garlic, minced
7 cups cabbage, coarsely chopped
1 tomato, diced
1 tbsp cornstarch
1/2 cup vegetable stock
1 5.5 fl oz can tomato paste
1 1/2 tsp sea salt
1/4 tsp. black pepper
2 cups grated vegan cheese
Cook rice as per package instructions.
Preheat Oven to 350 F.
Add olive oil to a large frying pan and on medium heat, sautee the mushrooms for about 1 minute.
Add onion and garlic and sautee another minute.
Next add the chopped cabbage and tomato and sautee until done.
In a small bowl combine the cornstarch with the vegetable stock and stir thoroughly. Stir into the cabbage mixture along with the tomato paste, sea salt and black pepper.
Add the cooked rice and mix thoroughly.
Remove from heat and transfer to an 11 by 8.5 by 3″ casserole dish.
Sprinkle with cheese and bake covered for 15 minutes. Uncover and bake for another 10 minutes.
