A Healthy & Delicious Recipe for a Chicken and Vegetable Quesadilla.
This delicious quesadilla is sure to get your mouth watering. It’s not only the perfect dish to serve up to your dinner guests, but it’s also quick and easy to prepare. About an hour and a half of your time is all you need to create this quesadilla recipe. And it’s one of those recipes that you’ll want to make again, and again as it’s super filling.
It’s got the perfect blend of vegetables and chicken, cheese, and a bit of jalapeno to please your tastebuds. And you can top it sour cream and/or any salsa that you have on hand.
As for the chicken, feel free to prepare it any way that you like, but we used this recipe, but without the onions and jalapenos on the side.
2 Chicken Breasts, cooked and cubed
2 Cups Mushrooms, chopped
1/2 Cup Onion, Chopped
1 Small Jalepeno with Seeds, diced
1 1/2 Cups Bell Pepper, diced
1/2 Cup Cilantro, chopped
1/8 tsp. Black Pepper
1/4 tsp. Sea Salt
1 1/2 Cups Cheddar Cheese, grated
1 1/2 Cups Mozzarella Cheese, grated
Or, go with 3 cups of marble cheese instead.
8-10 Medium Flour Tortillas
Your favorite salsa, and/or sour cream for garnish.
Prepare the chicken breasts as desired. For this recipe we baked them using this recipe, but without the onions and jalapenos on the side. However, you could also do them in a frying pan if you prefer that.
While the chicken was baking, we prepared all the vegetables and grated the cheese.
Then, in a medium to large frying pan, heat olive oil and sautee mushrooms for about 1-2 minutes on medium heat.
Next, add in the onion and sautee for about another minute.
Then add the jalapeno, bell pepper and tomato. Sautee until tender.
Lastly, cut up and add the cooked chicken breasts, the cilantro, black pepper and sea salt. Sautee and stir for a few seconds more until it’s thoroughly mixed and the cilantro is wilted.
At this point, you can let everything cool down, or you can begin to make the quesadillas.
To make them, you will need a non-stick frying pan. On medium heat, add a wee bit of olive oil and heat tortilla from one side. Flip the tortilla and fill one side with the meat and vegetable mixture.
Add a generous amount of the cheese mixture on top of the chicken and vegetables.
Then with a spatula, flip the tortilla over the cheese to close the quesadilla.
Continue to saute until the bottom is a golden brown, and then flip the quesadilla to brown the other side as well. Top and serve with your favorite salsa or sour cream. Pictured below you see one with the Cilantro & Onion Salsa, and the other with the Tomato and Cilantro Salsa. Both are delicious!
Or, sprinkle on some cheese, some cilantro leaves, a squeeze of lemon and sour cream as pictured below.
