Here is a very simple recipe for a coconut and pomegranate milkshake. The colors and the flavors blend well together in order to create a purplish-colored, rich and creamy milkshake.
Although mature coconuts are widely available in grocery stores, the young ones are generally only available at Asian markets. If you can’t find young coconuts, then you could probably use a mature one, but the flesh will not be as soft and the amount of water in it will be significantly less as well.
Raw Milkshake Ingredients:
Open the coconut and drain the water into a blender. You should have at least 1-1.5 cups of coconut water. If you don’t have that much, you can always substitute fresh water or use more than one coconut.
Scoop out the flesh and add it to the blender.
Juice the pomegranate and make the nut milk according to instructions.
Blend all ingredients until smooth.
Enjoy as is, or add 1-2 tbsp. Acai powder for an even more filling smoothie.
