A parfait is usually made with fresh fruits as well as with nuts and seeds. But who says you can’t make one with vegetables? This raw recipe is for a delicious vegetable parfait made with a creamy dill dressing and a vegetable salsa. The dressing is made with a home-made almond nut milk yogurt and a few other ingredients. It is not sweet and you probably would not serve it for dessert. Nevertheless, it does make for a great snack in between meals.
The creamy dill dressing offers up a great dill flavor and blends well with the salsa. You can also use the dressing as a dip for fresh vegetables, such as carrots and celery.
The ingredients below are enough for one parfait as pictured above. However, the recipe is easy to double in cases when you need to make more.
Creamy Dill Dressing Ingredients:
1/3 cup Almond Yogurt (How to Make Yogurt)
1/2 – 1 clove Garlic (depending on how well you respond to garlic.)
1/4 tsp. Sea Salt
1/3 cup fresh dill (finely chopped)
1/4 cup Cucumbers (finely diced)
1/4 cup Tomatoes (finely diced)
1/8 cup Avocado (finely diced)
1/8 cup Bell Pepper (finely diced)
1/4 tsp. Sea Salt
Make the yogurt as instructed. I like to make it with lemon for a nice lemon-flavored yogurt. It does not take much work to make the yogurt, however, it does take approximately 24 hours from start to finish. Therefore, you will need to plan ahead if you are going to use homemade yogurt.
Once the yogurt is ready, blend it up with the garlic and 1/4 tsp. sea salt.
Add the dill to the yogurt and stir until mixed. Do not blend the dill in a blender as that will create a green yogurt.
Next, dice the rest of the vegetables and combine in a small bowl with the sea salt.
Now you are ready to layer your salsa parfait. Simply start with a tablespoon of salsa in a parfait cup. Then spoon over some dressing. You can make as many or as few layers as you like. Just make sure that you end up with a layer of salsa on top. Enjoy!!
