1 English cucumber, sliced
2 Tomatoes, chopped
1 tsp. Lemon Balm, fresh and finely chopped
1 tbsp. Peppermint leaves, finely chopped
1 tbsp. Olive Oil, cold pressed
1 tbsp. Lemon Juice, freshly squeezed
1/4 tsp. Sea Salt, unrefined
Combine the cucumber and tomato in a medium bowl. In a small bowl combine the rest of the ingredients and drizzle over the cucumber and tomato. Toss and enjoy. If you like, you can allow the salad to marinade for an hour or so.
