This is one of my new favorite ways to enjoy baked cabbage. It is so simple that you don’t even need to have a recipe. You just slice the cabbage and top it with the rest of the ingredients to taste. Regardless of the simplicity, I thought I would share the ingredients with you anyway.
You can use just about any kind oil that you want, as long as it’s a healthy oil and able to tolerate high temperatures, such as coconut oil. As for the fennel seeds, you can use them either whole or ground up. A magic bullet works great to grind them up a bit before sprinkling on top of the cabbage.
Instead of using fennel, you could also try dill, which is one of my favorite herbs to go with cabbage. A few other herbs and spices to try are basil, cayenne pepper and cumin.
Crushed/Ground Fennel Seeds
Preheat oven to 350 degrees F.
Cut the cabbage into about 1/2 inch wedges. Brush the top with olive oil and sprinkle with the rest of the ingredients.
Bake for about 30 minutes, or until done.
Alternative Method: Instead of cutting the cabbage into wedges, you can also chop it up and toss with the rest of the ingredients before baking.
