This is a tangy raw ginger avocado spread which you can use in your veggie wraps as well as on your raw sandwiches. It makes enough for 2 wraps or sandwiches.
You can also use this spread as a dip for your vegetables such as carrots, celery or broccoli. Or, for a special treat, enjoy it with your favorite tortilla chips. (You may have to double or triple the recipe, especially if you are entertaining a group of people.)
1 Avocado, mashed
1 tsp. Ginger, fresh and grated
1/2 clove Garlic, minced or finely chopped
1 tsp. Oregano, fresh and finely chopped (You may use less if desired).
1 tsp. Lemon Balm
1 tbsp. Lemon Juice, freshly squeezed
In a small bowl mix all ingredients together and refrigerate in an airtight container for about 30 minutes to allow the flavors to blend together. Keep in mind that avocado turns brown rather quick so it is best to consume shortly after preparation.
