The recipe makes about 1/2 cup, and is enough for several salads. However, it is easily doubled or tripled if you need to make a larger batch.
2 tbsp. Parsley, finely chopped, (about 7-8 sprigs)
1 tbsp. Ginger, grated
1/4 cup Onion, finely chopped
1 Lemon, freshly squeezed
2 tbsp. Olive Oil
1/2 tsp. Unrefined Sea Salt
Combine all ingredients in a small bowl, and drizzle over your vegetables. You can serve them immediately, or allow them to marinate. The dressing will keep in the fridge for a day or two, but as always, it is better when consumed right away.
