This is my take on a Greek salad. For some reason I never used to like these salads, but I ordered one from a stand in the mall a while back and I really enjoyed it. The only reason I ordered it was because I was starving and it was the closest thing to a natural meal that I could find. At the time I wasn’t too thrilled about ordering it, but now I am glad that I rediscovered this salad.
If you want to make a raw Greek salad then you can omit the olives or make sure to use fresh ones (if you can find them). You can also add a cheese if you like, but the pine nuts in the dressing help to eliminate the need for cheese.
Makes enough for two meals.
4 cups Spring Mix or Lettuce
1/2 English Cucumber, diced or cut in half circles
1 Tomato, diced
1/2 small Onion, cut in strips or diced
10-20 Olives, sliced
1/2 cup Pine Nuts
1/2 Lemon, juiced
2 tbsp. Olive Oil
1 tbsp. Apple Cider Vinegar
1/2 tsp. Sea Salt
1/8 tsp. Black Pepper
Prepare the vegetables and set aside.
In a blender, combine the ingredients for the dressing and blend until smooth.
Toss the vegetables with the dressing and enjoy as a meal by itself or as a side salad.
