This marinated mushroom and tomato salad is great on its own as a single meal, as well as a side dish, or as a topper for your green salad. The recipe makes 1 large plate full.
Many people wonder whether or not it is safe to eat raw mushrooms, as there are some that are poisonous. This could also be because there are a lot of people that will say that you should not eat raw mushrooms. But I want you to know that it is safe, provided that you purchase them at the grocery store and wipe them clean with a damp cloth before consuming. You can also rinse them under some running water if you want.
8 Mushrooms, sliced
1 Tomato, diced
3-4 Green onions, chopped
5 Peppermint leaves, fresh and finely chopped
1 tsp. Oregano, fresh and finely chopped
2 tbsp. Lemon juice, freshly squeezed
1 tbsp. Olive oil
1/4 tsp. Sea salt, unrefined
In a medium sized bowl combine the mushrooms, tomato and green onions. In a small bowl combine the rest of the ingredients and drizzle over the mushrooms, tomato and green onion. Gently toss and allow to marinate for 1 to 2 hours or longer.
