This is a savory pineapple fruit salad. It makes for a great entree, side dish, meal and even for a tasty dessert. Ideally fruit should not be served for dessert because it digests much quicker than other foods. However, it is still better than a chocolate cake, baked pie or a bowl of ice cream.
I wasn’t raised to eat onions, garlic and other herbs and spices with fruit, but they actually go very well together. You get a little bit of a pungent or bitter flavor and a lot of sweetness. The pungent flavor helps to bring out more sweetness in the fruit.
Makes about 5 cups.
1/2 Pomegranate Arils
1/2 cup Cilantro
1/2 to 1 Small Onion
1 Garlic Clove
1/2 Jalopeno Pepper
2 tbsp. Lemon Juice
3 tbsp. Flax Seed Oil
1/2 tsp. Sea Salt
Dice the pineapple and put into a medium-sized bowl. Remove the pomegranate arils (seeds) from within their compartments. Peel the orange and cut into thin slices.
Next, wash and chop up the cilantro. Finely dice the onion, garlic and jalopeno pepper. You could omit the jalopeno, but it helps to bring out a great flavor in the salad.
Add all the ingredients to the bowl of pineapple and toss it a few times.
Combine the lemon juice, flax seed oil and sea salt in a small bowl and drizzle over the salad. Toss the salad once more and serve as desired.
