It is very simple to make your own nut milk at home. Plain nut milk is a great alternative to store bought milk, including dairy and soy milk. Although nuts may be expensive, making your own milk, however, is not when you factor in how much you can get out of a small bag of nuts. It is also fast and easy.
To be honest, plain nut milk is not the greatest, but you can add any kind of flavoring to it that you like, such as vanilla, cinnamon, nutmeg and ginger. You can also add your favorite sweetener, such as honey, stevia or agave nectar. The milk can be added to your smoothies, tea, and other cool drinks and desserts. Last but not least, you can also use nut milk to make your own yogurt and sour cream.
The following recipe makes 2 cups of nut milk. You can easily double it if needed.
1/2 cup Nuts of your choice (or rice)
2 cups water
The ratio is about 1 part nuts or seeds and 3-4 parts water. However, if you want to have a more cream-like milk, then you would only use about 2-3 parts water to 1 part nuts. This is also the case if you want to make yogurt with the milk.
To make the milk, simply put the nuts into a cup or bowl, and soak them in 1 cup of water for about 6 to 8 hours. Drain and rinse the nuts before placing them into a blender along with 2 cups of water. If you are using a magic bullet, reduce the amount of water to 1 cup when you blend it, as both cups will not fit into the magic bullet cup. You can add the second cup once you have blended the nuts.
To strain the nut milk, you will need either a nut milk bag, or a cheese cloth and a sieve. If you have a nut milk bag, simply pour the milk along with the pulp into the bag and strain. If using a cheese cloth and sieve, place the cheese cloth into the sieve and pour the milk. Once the milk has partially drained, you can then take the cheese cloth and squeeze the remainder of the milk out.
