This Raw Caesar dressing is not the same as the processed stuff that you buy at the grocery store. But nonetheless it is a great and healthy substitute, and before you know it, you will love it, and will never want to back to the old stuff again.
The great thing about this dressing is that you can soak your lettuce in the dressing and not have to worry about adding extra empty calories as all the ingredients in this dressing are natural and good for you.
You can add more lemon juice or olive oil instead of the water. This simply helps to give it more flavor and a creamier texture. Hemp hearts also contribute to a nice creamy texture, which goes great in a dressing.
The recipe makes about 1 cup.
1/2 cup Raw Pumpkin Seeds
1/2 clove Garlic
1/2 Lemon, juiced
2 tbsp. Olive Oil
1/2 tsp. Unrefined Sea Salt
1/4 cup Water
1-2 tbsp. Hemp Hearts
In a magic bullet or food processor grind the pumpkin seeds and garlic. Add the rest of the ingredients and blend until smooth.
