Who says you cannot still enjoy a stir fry on the raw food diet? Okay, it may not be exactly as the cooked version, but you can still enjoy all the great flavors of the vegetables such as peppers, mushrooms, onions and more. And the best part is, is that none of the vitamins or nutrients are destroyed with heat.
This recipe makes 1 big plate to serve 1 individual. However, it is fairly easy to double, and you can add your favorite vegetables to make it even more tastier.
1/2 Zucchini, sliced
3 Mushrooms, sliced
1/2 Green Bell Pepper, julienned
1/2 Yellow Bell Pepper, julienned
6 Radishes, sliced
1/2 cup Onion, finely chopped
1 tbsp. Olive Oil
1/2 tsp. Unrefined Sea Salt or Tamari to taste.
Place your prepared vegetables in a medium bowl. Prepare the marinade and toss with the vegetables. Allow the vegetables to marinate for at least an hour before consuming. This allows the flavors to blend for a great taste.
