This is a very simple, yet tasty salad. I love the avocado and lemon dressing and the sunflower seeds on top. The sunflower seeds not only are tasty, but they help to fill you up, just like the avocado. I like to add sea salt, because I just love salty foods, but you can go without it, as the lemon adds a nice zing to it.
This simple salad is great by itself as a meal, or you can enjoy it as an appetizer, or as a side dish for just about any other meal. I used romaine lettuce, but I imagine that any other type of lettuce will work just as well. I just prefer to use romaine because it is my favorite lettuce.
The salad makes enough for one large plate.
1/2 head Romaine Lettuce (or lettuce of choice)
1/4-1/2 Lemon, Juiced
Sea Salt, to taste (optional)
1/4 cup Sunflower Seeds, Toasted (click here for instructions on how to toast sunflower seeds).
Chop the lettuce into bite-sized pieces.
Mash the avocado and mix together with the lemon juice and sea salt. Massage the mixture into the lettuce with your hands. Add the sunflower seeds once they have cooled, and lightly mix them in with the salad. Enjoy!!
