If you like mint then you will love this zucchini, pepper and mint salad. The mint adds a nice touch to the rest of the ingredients.
The recipe makes one large plate full, which is enough for a meal for one person. You can also divide the recipe and serve it over a leafy green salad.
The recipe calls for dried mint, but if you don’t have it, fresh mint will work equally well.
1 Bell Pepper
1 Slice Onion
1/2 Green Zucchini
1/2 Yellow Zucchini
1 tbsp. Parsley, fresh and finely chopped
1 tbsp. Peppermint, dried and crushed
1 tsp. Lemon Balm, fresh and finely chopped
1/2 Lemon, juiced
1 tbsp. Olive Oil
1/2 tsp. Unrefined Sea Salt
Slice your vegetables and place them into a medium bowl. Mix the ingredients for the marinade in a small bowl and then toss with the vegetables. You can enjoy the veggies right away, or you can allow them to marinate for an hour or so.
